I had my first disaster this weekend. If anyone out there can give me any hints, please let me know. I made the wedding cake Friday evening, everything was fine. I iced it in buttercream, then placed my fondant on top. The heat here has been 32 degrees celsius, for over 4/5 days now. It's been really humid too. I have air conditioning in my home, so I didn't have my disaster until I brought the cake to the hall. The AC was not on, and the lady that runs the hall said she would not turn it on for another 2 hours. The cake almost instantly started getting condensation on it, then, at the back, the fondant started weeping/ slipping. The bride came, and I told her I could fix it, then I suggested that we just do it in buttercream, then we wouldn't have to worry about that at all. She was really happy with the cake, and was very sweet about the whole situation. I came home, ripped off the fondant then iced it all in buttercream instead. Was there something I did wrong, or was it just from the heat and humidity? We don't really have weather like that here, so I haven't had to make a cake in this heat/humidity. If anyone has any suggestions for what I can do differently please let me know. Thanks! Sorry, I didn't take any photos of the cake.
Wow! It sounds like the heat and humidity to me (the likely culprit where I live). No air conditioning for over 2 hours??? I couldn't imagine a cake surviving.
I'm so sorry about the situation. It sounds like you saved the day, however. Great job!
the same thing happened to my cake last weekend, you can read it under my post, but these people did not have the air down low, it was about 78 degrees and the same thing happened. Luckily you had a compliant bride!{{{{HUGS}}}}
Yes it sounds like the weather to me. I know working with fondant this past week, I put mine in the fridge and when I took it to the delivery point, it was dotted with condensation.
I am very happy for you that your bride was so understanding, and happy with your work. Mostly for not flipping out and knowing you knew how to fix it. Good job.
Hi!
I also had that problem once and I don't know exactly what went wrong. The room temperature at my kitchen was normal (not too hot, not too moist) and the fondant started imediatly slidding from one of the sides.
I think I put too much buttercream... that could explain the slidding...
Another thing: I never put my sugar paste on the fridge... after you use it, you will see those condensation drops all over and it may spoil you decoration.
One note: I use ready-made sugar paste
Thanks everyone for the advice, I really appreciate it! ![]()
