I can't believe it - just today, three people that I don't even know emailed me to place orders. Also, some neighbors from down the street came by today to see if I could do a cake for their cousin's birthday. Two people from my classes last semester called me earlier this week to place orders (which I completed one this evening, and the other will be ready in the morning...tired!!!), and last week, my cousin who is a decorator asked me to do her daughter's birthday cake. If that wasn't enough...

Four people from the last baby shower I did a cake for already called me to place orders for August, October, and November. AND my friend asked me to do her wedding cake. Last week, I also did some 'Handy Manny' cupcakes for a 4 yr old's birthday party. The lady told me to keep it simple, as she had trouble finding any accessories for the party. To make a long story short, she totally flipped out because she loved them so much, and...a $50 tip.

This may not seem like a lot, or anything too overwhelming to some of you guys who normally have a lot of cake orders every week, but I have limited time and always try to make EVERYTHING work...and I get extremely fatigued extremely quick. But I kinda freaked out because earlier, I jokingly read a horoscope which predicted that I would be going through an overwhelming time that will earn lots of money and knowledge. HA!

I'm pretty excited, and I've tried to keep my mouth shut about this, but...
a local restaurant-owner contacted me about being the pastry chef at his new restaurant that he will be opening later this year/early next year. I totally want to do this, but it will be hard to juggle school and my awesome current job that I refuse to give up...heh. Even if it doesn't happen, I'm so happy that someone that I don't even know saw my work from my coworker and was so impressed that he wanted to hire me. CRAZY.

And...the last thing I'm excited about? Well, I was trying to raise $2,000.00 for my trip to Italy or England next spring, and I was trying to raise it WITHOUT taking it from my paycheck. Well, from cake sales alone from 2007, I've already gotten it. I'm so proud of myself for saving it up and not spending it! icon_biggrin.gif

I just had to share this here on CC, because I don't think that any of my friends outside of CC would be able to understand my excitement regarding cakes icon_smile.gif.

How exciting! You will do fine! Just say to yourself "one cake at a time...one cake at a time...one cake at a time" whenever you feel stressed. Get organized and do everything you can do ahead of time. And it all will be a piece of cake!

And I am so jealous of a trip to Italy or England next spring!

Congrats on all of the business even though you'll be stressed for sure. You can totally handle it and your reputation is high all ready so it's going to only get better (and probably busier) for you too.

Thank you, thank you, everyone!

Since I posted this, two more people contacted me to do their wedding cakes, and one of the people who contacted me previously already placed two more orders for next week (she LOVED the cookies I did for her for this week!).

I'm making almost as much money from cakes now as I do with my other job...no wonder I've been so tired lately!

BTW, JoJoMick...I'm in Visalia. I used to work in Fresno, since my dad's company is located there...and I go up there once a month. Could you recommend some good cake supply stores that are in Fresno?

Thank you SO much, everyone!

I just got a follow-up on some shark cookies I did last week.
The lady said they were a HUGE hit, and everyone loved them, and that she liked them so much better than the cookies she had been buying previously from another lady (this lady no longer does cookies, so she was happy to find another cookie artist!).

Anyways, she is having two more parties this weekend, both of which she asked me to do the desserts for. I guess the caterer is looking for a new pastry artist, and is 'looking forward' to meeting me Friday. :-O

So between this established caterer, and the restaraunt that's opening late 2007/early 2008...ahhhh. I'm kinda freaking out.

Well, I need to head off to make SIX DOZEN COOKIES and THREE CAKES for Friday. :-O I think I spend more hours making baked goods now, than I do at my job!
