I have a fondant covered cake due tomorrow, and I am working on it today. I am doing a little at a time. Now, my question is, how do I store the cake, when I am finished until pickup tomorrow? Will it stay fresh in the box until then, or do I wrap it or what? I have no clue, I do know if you leave fondant out, it will harden, so will it do this also, in the box? I have never covered a full cake in fondant before, only used it for 3-d figures and such! Thanks for any help you can offer me. icon_redface.gif

Unless you have perishable fillings, it should be OK on the counter, covered to protect it from light and dust.

If the fillings are perishable, it must be refrigerated. when you remove it from the fridge, be sure the room is a cool as possible to reduce condensation. If condensationf forms, it will evaporate. A small fan can help.

If its a warm day I tend to put my cakes in the fridge, and take tham out about two hours before needed so they can come back to room temperature, and so the fondant dries out again as it can become sticky. Otherwise I just try and keep them in a cool dry place in their boxes.
