Can anyone PLEASE tell me why my IMB is cracking? I have just done a wedding cake for tomorrow, I've put it in the freezer (I don't have refrigerator space for a large 4 tier, and I worry that it would dry out the cake) and my icing has developed some cracks that i am going to have to repair. I don't know how bad its going to get!

I have never frozen a meringue buttercream. you may find that when it warms up, the icing will swell a bit and fill in the cracks. I wouldn't touch it if can leave it along while it thaws.

That kind of what I was thinking too....I will just keep my fingers crossed I guess and be prepared to repair.
Thanks!
