I'm making the white almond sour cream for the first time. two questions. My cake doesn't seem to be rising as much as a normal mix would (I haven't tried scratch baking yet). I only mixed it a couple of minutes as the recipe said but should i have mixed it longer to make it rise more?? I followed the directions exactly.

When I make this [or most cakes], I don't watch over it every second but I do know that it usually comes out very level for me. Maybe it doesn't rise a lot overall as you are watching it. Relax, it will be fine!

I would think you'd be ok. I have used that recipe several times and everyone loves it! (Even those that prefer chocolate cake). Let us know how it turns out.

It should work just like any extended cake mix. Mine rise just fine, but I also do not watch them either. I have the occasional cake mix do this though, so it may not be your recipe it may be the mix if it doesn't rise.

I have also started adding 1 tsp of baking powder when I extend a cake mix and havn't had any trouble since.

Mine doesn't rise like a box mix either, it stays pretty level. Good luck, you will love that cake!

I baked my first one tonight too. The batter tasted awesome! Mine didn't rise like box cakes usually do either; it stayed pretty level which was fine with me. It also seemed very moist. It's wrapped and in the freezer ready for decorating on Friday.

We're having a 43rd anniversary party for my parents Friday night and I can't wait to try it. Has anyone ever tried a chocolate almond sour cream cake?

I'm going to put strawberry filling between the layers and I can't decide whether to use chocolate buttercream, white buttercream or fondant.

I have done the WASC with chocolate cake and substituted the almond with more vanilla and it was a hit too!

All those fillings sound yummy to me!

I LOVE the WASC cake! I would love to adapt the recipe to different flavors, such as chocolate! Mine also rises less than a box mix, but very evenly and moist! It's delicious!

I found that it's a "heavier" cake than just a box mix cake so it didn't rise as much. It makes a moist,delicious cake!

I just wanted to let you all know that my WASC turned out great. It's not quite as sweet as a normal white cake I didn't think, which is good. Thanks so much for all of the help!! It didn't rise like I expected and it was denser but it's a great recipe. It was very moist.

just use choc mix instead and 6 eggs instead of 8 egg whites

I love this recipe as well. I have made it into a chocolate cake by adding Hershey's syrup. It was so tasty! There are a lot of variations on this cake to try different flavors. Try berry jusice instead of water and stir in berries. Substitute 1 cup lemon juice for water and use 6 whole eggs, lemon zest and 1 tsp lemon extract.

Hmm, I didn't do that...just changed the box mix and no almond--extra vanilla. Looks like there is more than one way to switch this recipe to chocolate!! thumbs_up.gif Good to know!

I love the WASC cake too! Also, if you don't need an actually white colored cake, you can use this recipe with yellow boxed mix or even a white mix and use the 6 whole eggs instead of the 8 egg whites. I hate wasting the yolks.

I love the chocolate version too - very dense and moist. Everyone loves this cake!
