Today was the first time I've baked anything much less a cake for the past almost 7 months. The kitchen remodel is almost done, just need to finish the cabinet doors. Anyway, I find I'm not remembering some of the basic things that I used to know like the back of my hand. So....here goes....
1. Can I put a still warm cake back in it's pan, cover it well and put it in the fridge till tomorrow?

2. or should I freeze it?

3. I'm not even sure what I can't remember, any tips will help. I feel like a baking newbie all over again!

oh, and did I mention that during those 7 months I was on a migraine med that totally sucked my thoughts and memory, literally, while I was even thinking. Scary! Still working on that one. The Dr said that "all my women patients love this one because it makes them lose weight." No wonder, you can't remember where the kitchen is icon_surprised.gif !

Anyway, thanks for whatever you are willing to share.

Are you going to decorate the cake the next day? Because you can cool it completely, wrap in in plastic wrap, and it will keep fine till the next day. You don't need to refrigerate it. I've also baked a cake, cooled it, popped it back in the pan, and put the whole thing in a large ziplock bag until the next day, and it's been fine.

If you want to keep it for a few more days, then let it cool completely and wrap it really well in plastic wrap, put in a freezer ziplock bag, and freeze it. Let it come back to room temperature before you unwrap it.

Hope that helps you out! I know what it's like to lose a few brain cells to migraines! (But mine are not nearly as bad as you describe! I consider myself quite lucky in that department!)

I always bake my cakes the day ahead. Let them cool and then wrap them in plastic wrap and leave them on the counter overnight. If its going to be a few days prior to decorating I throw them in the freezer.

Just make sure to cool completely before wrapping or freezing.

Migraine med that makes ya loose weight? Please pm me and tell me what it is! I have tried 4 different meds for my migraines and nothing works. If nothing else, I could feel better knowing that I am dieting while dieing.

Oh, and on a side note, if it is a couple days before using the cake, yes wrap it very tightly, and I wrap again in aluminum foil and toss in the freezer. HTH

Ok all, here'e the scoop on the migraine med. I know that having your thoughts sucked out of your brain sounds funny but the side effects are worse than just what I mentioned. Hairloss, memory failure, horrible rash, fatigue, dizziness, burning nasal passages, loss of appetite, difficulty breathing, anxiety, buzzing in hands and feet and on top of all that, it didn't work. icon_cry.gif The stuff is really scary. It is actually a medication used for bi-polar disorder and anxiety disorders. It bothers me that the neurologist didn't mention any of the other side-effects, just the weight loss one. What I do use is a medication called Fiorcet. It is very helpful.

Just a side note, my husband and I had to change our way of eating due to some other health reasons and since March, he's lost 23 lbs and I've lost 13. This is just from changing our diet to chicken and fish, brown rice, whole grains, veggies and fruits. We avoid white sugar, white breads, pretty much anything white or processed. Of course, once a week we splurge and bbq a steak or something like that and we did celebrate my quitting work by going to Famous Dave's BBQ and having his famous Bread Pudding icon_lol.gif !! It's all in moderation and for the DH, getting out and riding his bike has really helped.

I hope this helps you all. Oh, BTY, since I stopped doing the white sugar and sweet stuff (except for an occasional bit of chocolate) I have not had more than 2 major migraine events in all those months!
