Ok everyone - be honest!! I have been decorating for 2 mos and this is my first "official" cake so any suggestions for improvement are greatly appreciated!! (I already know the handwriting is horrible - my LEAST favorite thing to work on) Anyway, the cake itself is red velvet with all buttercream. It looks much better here. As I was loading it into my vehicle for delivery it promptly split in half
Luckily, I was able to fix it and no one seemed to notice (except me of course) The bride loved it and apparently so did everyone else!!
That is really good! PLEASE, your handwriting is good! I can't believe how perfect your roses are.....any tips? Mine sometimes turn out good, but sometimes are really bad.

Your cake looks great...and your handwriting looks better than mine! Sorry to hear about the split in your cake. Those big cakes can get heavy, and transporting can be tricky. Make sure you really stack up the cake boards or get a more sturdy plate to put them on. It is heartbreaking to work so hard on a cake and then have is fall apart because of something so simple. (I know from expierience too...) Live and learn I guess. Great job though, keep it up!!
Handwriting bad, WHAT? It's a TON better than what I can do, I'll tell you that! It's a very pretty cake, and of course everyone loved it - it's beautiful, and I'm sure was delicious! Congrats!

ccsweetness, I make my roses on a wooden dowel. I have found that much easier for me than the wilton nail. Also, I like how they stand up a little more than the ones made on the nail. As far as tips, all I can say is practice, practice, practice. I found that I struggled the first few times, but pretty soon it became second nature. I also seem to use a little softer concistency on my buttercream than "stiff." It is a little easier for me to work with. Basically I don't add any meringue powder and about 1/2C less of powdered sugar than called for. I also used whipping cream rather than water or milk. I find this makes for a smoother consictency AND tastes really good too!!
