can someone tell me how long ganache can sit out at room temperature?

Well, if it's on a cake and dry, I am inclined to say as long as the cake lasts.

i might have my fisrt wedding cake order.
i would say the cake would sit out about 3-4 hours before it's served from what the bride has told me.
i put most of my cake in the fridge and take out 30 min before it's served

Ganache is fine at room temperature for about 2 days. Likely because the cream is heated as most things with this much cream need refridgerating but ganache is actually usually best off at room temperature because refridgeration causes it to lose some of its gloss.
