Fondant With Perishable Filling - Chill Overnight?

Can a fondant covered cake with perishable filling be chilled overnight in the fridge? Should the cake be put together with the dowels or should this be done on the day the cake is needed.

This is probably a very basic question but I just recently joined and am considering making a cake with fondant for a special occasion.

I'm relatively new, but I do know that fondant can't got in the fridge. It'll turn your cake all wonky.

I've made a cake in the past that had a cream filling with fresh strawberries and covered in fondant and I just left it in a cool dry place over night and it was fine, I guess the fondant seals the cake and keeps it fresh?

Yes, you can refrigerate a fondant-covered cake.

Just be aware that as the cake returns to room temperature, the fondant will sweat. If you keep a tabletop fan blowing on it, it'll evaporate the condensation really quickly. You may run into problems with colors bleeding if the evaporation doesn't happen quickly enough.

If you are using a perishable filling, definitely DO NOT keep the cake out at room temp.
