I am going to be making a monster truck cake for my sons 5th birthday very soon using mostly fondant, what is the best way to store it while I'm working on it, and how much in advance can I start working on it ??

if the weather is humid id store it in a cool place lightly covered, the fondant will swet in the fridge, one day ahead is best for cake moistness

I've worked on fondant covered cakes several days in advance, leaving them covered on the kitchen counter. My cakes usually do not have perishable fillings and icing.
