Help W/ Icing

Can someone please help me with my icing. When I do a cake (doesn't matter round, square, sheet, etc...) my icing is never even. On some parts I end up with icing 2 inches (slight exaggeration!) and other areas it is very thin. For some reason I can't get even coverage all over. Is there some secret that I am missing? I love all the info on how to make it smooth, but I need to put it on first! Thanks in advance! icon_smile.gif

if you can get yourself a couple of tools, these will help and this is what i recommend...

a turntable cakeplate (sorry cant think of the name) you can get one at walmart or michaels by wilton for around 10....of course you could get a higher quality one as well if you want to spend the extra money.

a benchscraper. i bought one at target for 3 dollars. it was in the kitchen gadget section and it looks like a big dough chopper. its about six inches long, stainless steel and has a grip on one end. it may be called a chopper or apple corer (strange i know, but it does great with icing) you can also use it to scrape the work surface clean real fast .

anyway, if you spread the icing all over the cake, put an extra bit on top and just slightly push it over the top outer edge. put the cake on the turntable, and take the bench scraper, place it parallel with the side of the cake, and the bottom flush with the cake turntable. put your other hand on the very back of the turntable and give it a full turn, keeping the benchscraper against the side of the cake in the same place (turn the cake , not the benchscraper). the icing will build up above the top of the cake. when the side is smooth (and should be even if you've not moved the benchscraper) you can then use the scraper to start on the edge opposite of you and pull in towards the middle to make the top flat. do that around the entire cake top and bend down to look at eye level to see if it is even.

i know it sounds complicated, but it really works. like the previous poster said, practice practice! i have bought the large flat tip also, but have yet to use it. i bet it applies it pretty evenly....
