If you've tried Texas Sheet Cake before and didn't like it, you probably just had a bad cake. I think it's called Texas Sheet Cake because it's big and flat like Texas. Anyways, the cake we make is very heavy, like a brownie, and the frosting is a lot like fudge. It is delicious, especially when it's warm. It is a signature dish for a lady in our church who brings it to every gathering and there's never any left. It's so good!

I'm thinking what they really meant about the frosting was plain frosting (no pecans) on half and frosting with pecans on the other half.

I make the Texas sheet cake usually in a full sheet pan with an extender, I just make a regular chocolate cake, then the icing is made on the stove, with cocoa and powdered sugar and pecans, it is then poured over the top on the warm cake, usually right out of the oven, it is spread on. When it cools it kinda hardens like a fudge. Pretty popular out here, they are great for large groups. I cut mine line you would a brownie, with a warm knife, remove the extender and put them on a plate or box them up.By the way, I am in Texas.
