Am I crazy to do my first topsy turvy in buttercream? This is a cake for me and I prefer buttercream but I was thinking this was a good excuse to try one of these cakes. What do y'all think?

It will work just fine. I have seen them in buttercream, although I can't think where at the moment. I know Sylvia Weinstock only works in buttercream, and I am pretty sure she has done them.

I know Antonia74 does hers in BC sometimes. You could check her pics. You can get a sharper edge using BC and they can be a pain to cover with fondant....although I just did one last weekend that I covered in fondant and it went pretty well.

I was thinking about doing the same thing for my own birthday cake. (Yes, I'm throwing myself a party and making a gigantic cake to share with all of my friends and family. Hey, we're always making cakes for OTHER people, right???) I'm guessing that you can ice your BC layers and refrigerate them, and they should stack okay. I've never made this kind of cake, either, so any other tips or how-to's would be really helpful.

I'm doing the same thing. This cake is for my actual birthday in a few days and then I am having a party in Sept (too not, everyones out of town) so I can make another cake!!!

Yes you can do them in buttercream! icon_smile.gif I only do mine in IMBC with fondant accents now. SOOO much sharper and easier to ice than all fondant.

It's Italian Meringue buttercream. All butter, no shortening. You can find a few recipes on here or Martha Stewart's website too, under the recipes section.
