Fondant Groom's Cake - Need Quick Tip....

I have a groom's cake to prepare for the first time - yikes!!!!!!!!!!!!!

Wedding is a Friday evening. It's a fairly simple yellow cake, choc/pb icing with fondant and some detail on top.

Can I have this completely finished by Wed evening and still have a fresh tasting cake by Friday evening? How should I store it if that's the case?

As long as nothing needs to be refrigerated, you should be fine. I would just box it up and keep it covered.

I think it would also depends on if it's a scratch or box mix. I'm not much of a scratch baker (yet!) but they don't have the same lifespan as a box.
When I make cakes I don't bake until 2-3 days before depending on how big the project is just so the cake is as fresh as possible.

Is it possible to bake the cakes on Wednesday and freeze them for a day or two? To me, this serves two purposes....first, the cake remains very fresh tasting. Secondly, it preps the cake for an easier frosting job. You can defrost it before frosting, but it will still hold up better than a freshly baked cake. If you can't wait to do the frosting, then once you put on the frosting and fondant and decorate, put the cake in a box, and allow it to sit at room temperature. If you cover with airtight wrap, it might make your decorations too soft, so let it "breathe" a little!

What is the best way to wrap it or store it if I decide to freeze it? That would save me so much time as I also have cookies to bake and decorate!!!
