I am making approximately 100 iced cookies for a wedding in October. The wedding is Friday evening. The cookies will be made of shortbread recipe, using Glaze Icing and outline with gumpaste flowers.
When should I make the dough? The week before and freeze the batches?
Also, when should I start baking?
When should I decorate?
Once iced and decorated, do I store them in the freezer or refrig?

Depending on how intricate the decorating is, a 100 isn't hard to do. You'll want to allow at least a day for drying time. Bagging will take you about 2 hours. Baking will take you a day. I always make extras since you'll have breakage, cookies that don't bake up the way you want, etc. The recipe I use I make in the am, roll it out between 2 sheets of parchment and pop in the fridge/freezer and by the time you get the other batches made your first is ready to cut out. Then I place the excess in a baggie in the fridge to keep it chilled. So basically you need(at least this is what I need
):
-day to bake
-day to decorate
-day to dry
-couple of hours to bag
