I am making my first wedding cake, it is for my sister. Any cakes I have always done have been simple and easy enough to make and decorate that same day, very late parties. She wants a 7 layer cake which the biggest I have made so far has only been 4 layers. I need to make the cake before, how many days ahead can I make the cakes and crumb coat. How do I store them, in the freezer, under a cake dome....?

You can bake, crumb coat and freeze them easily. If they are well wrapped, they will keep perfectly for a month.

wrap them in plactic warp then foil and they should be fine just dont unwrap before they thaw out
Just make sure you bring them back to room temperature before you begin to decorate... If you dont want to freeze I usually bake 3 days before I need it I bake it let it settle over night crumb coat the next day. I have never ever had a complaint about being stale.. I would try to keep them in the fridge although thats might be tough with so many layers I know that would never fit in my fridge..
After baking, resting and crumb coating, I freeze mine unwrapped for a few hours, then wrap in 3 layers of plastic wrap and then a layer of foil. As blessBeckysbaking said, let it thaw out completely before unwrapping. (The foil will get condensation on it while it thaws, but leave the wrapped cake sit untouched and this will go away!)
