I'm a beginner cake decorator and have questions about decorating cakes with fresh flowers. My first question is...is there a barrier between the icing and the flowers. Secondly, if using live flowers is the whole cake edible. My dm's bday is next week and she loves zenias. I want to decorate her cake with them but I am clueless. I would appreciate any advice someone is willing to give. Thanks icon_rolleyes.gif

I use floral picks when placing flowers on the cake so they do not come in contact directly with the cake. Some people wrap the stems in plastic wrap before inserting to the cake. When using as a topper, I use parchment paper under the flowers.

Well, Zinnia's are actually on the list of edible flowers. However, most commercial flowers are covered in pesticides, so I would use flower picks or at least have waxed paper or something under any arrangement you place on a cake.
