Tomorrow I need to deliver a Wedding cake. I need to have it there and set up by noon when the florist arrives.

The reception begins at 3:00. The cake is all buttercream with no special fillings. How long can this cake be left out? I am too scared to assemble it and leave it to somebody else to pull out of the fridge at the country club.

Any thoughts would be helpful!!

Thanks! Debra icon_redface.gif

if the room is cool, it will be fine sitting out.

Be sure to take a picture of it when it is completed right before you leave and also it is a good idea to have someone involved sign for it that you left it in mint condition etc. Cover your tush!

I agree always take a picture of your cake before leaving. Many unforeseen things can happen to a cake once you set it up. A buttercream cake can sit out for hours as long as it is cool. icon_smile.gif

IF its not being sat up outside and/or all weather conditions permitting....

Your cake will be fine left out in a cool room,or like the climate in your home maybe....I do lots of all buttercream cakes...just go ahead and assemble it tomorrow as scheduled and make sure its level and outta harms way and it will be just fine..I had much rather set my cakes up hours before the receptions are to take place...no people to bump into you or your work, its calmer, and if you need to make repairs you can,or what ever...but all in all a buttercream cake setting out will be just fine and hold up well icon_smile.gif

Rule of Thumb:Take Pictures!

Thank you all for easing my mind. I had planned to take a picture, but it is a good idea to have someone sign that the cake was delivered in good shape!!

The reception is in an airconditioned room so I should be okay setting it up early.
Thanks again!!
