I'm making a rum cake for a client today for her to taste tomorrow for her wedding. Her wedding is July 28th. Can I make up the rum cake and have her taste it with a small piece and then freeze the rest for the actual event. I would hate to make all this rum cake for a tasting and discard the rest. Or is that bad taste to make it and save for her wedding. She is after all paying for it..the wedding cake. The tasting is free.

Is this like a fruit based cake or just a plain pound cake with rum in it?
I know the fruit based rum cakes freeze very well.
You could always make a small sample for her to taste. Then make the actual cakes closer to the wedding. If she does not like the taste of the sample then you won't be stuck with a bunch of cakes.
The recipe is a pound cake w/ rum in it.
It should be ok. However, seeing that it's a simple pound cake with rum in it i personally would just go ahead and make it closer to the wedding.
