I made a chocolate genoise from the Cake Bible. There was also a recipe for simple syrup (it made a little bit more than 1 cup) accompanying the recipe for the 2 9" cake layer halves. After I made the cake and the simple syrup I started brushing it on. I brushed on about a ¼ cup total for both cakes and thought the recipe for the simple syrup just made too much. But then I put together my cake and it was dry still. Am I supposed to put that WHOLE cup of simple syrup on the 2 halves??

You may not need the whole cup, but you probably need more than 1/4.

The syrup should be allowed to soak into the cake. I suggest apply it about the same as you did before. When you finish the second layer, go back and do it again.

You can also use a squirt bottle to apply the syrup.
