One pound is about 4 cups. In terms of this kind of icing, an ounce or two one way or the other, usually doesn't do any harm.

A pound equals 4 cups so if I am doing my math right 2.25 pounds would be 5 cups. HTH

Ok very bad math on the last post. If 1 pound equals 4 cups then 2 pounds equals 8 cups and .25 pounds equals 1 cup. Therefore 2.25 pounds equals 9 cups. Sorry about the bad math on the last post. I'm not blonde so I have nothing to blame it on....lol

I only use Antonia's icing for cookies and I just use the 2 lb bag of PS. It is perfect consistency for me then to start outlines then I thin out with just a tad of water and fill in.

I found this out by accident when all I had was 2 lbs of PS. SInce then I have done it this way with no problems!
