I am very excited, but a little irritated. I have several cake flavors to choose from, 17 to be precise, and she wants a flavor not on my list. At least I have time to test the recipes. Does anyone have an almond cake recipe they are willing to share? I looked in the recipe section, but have already tried that one and was not a huge fan (sorry).
Anyway, thank you for letting me get that off my chest. As I said I am very excited to do this cake. This will be the fourth cake this woman has ordered from me in the last three months, so I do not want to let her down with a horrible tasting cake. Thank you!

Toba Garrett's Almond Paste Cake
6 oz unsalted butter, room temperature
4 oz almond paste
2 c granulated sugar
4 large eggs
1 tsp almond extract
1 c whole milk
2 1/2 c cake flour
1 T baking powder
1/2 t salt
Preheat oven to 350 degrees. Butter two 7 inch cake pans or one 10 inch cake pan and line with parchment paper. Set aside.
Cream the butter, alond paste, and sugar for 4 minutes. Stop, scrap the bowl, and cream for 60 seconds more.
Add eggs, one at a time, to the creamed mixture. Beat in the almond extract.
Sieve together the flour salt and baking powder. Alternately add the flour mixture and the milk to the creamed mixture. Ladle the mixture into the baking pan. This is a thick batter. Carefully smooth the batter with a metal offset spatula. Hit the pan against the counter to burst any air bubbles.
Bake in the center of the oven for 45 minutes or until the cake slightly shrinks and a toothpick inserted into the center comes out clean.
The almond-paste cake freezes well and can last for 3 weeks in the fridge.
Yield 2 7-inch cakes or one 10-inch cake.
