When making MMF is it ok to NOT use all of the powdered sugar?

I have made MMF a few times by hand... still waiting on my promised Kitchen Aid. Anyways, I got the recipe from Cakecentral and it says to use the whole 2lb bag and I still have like, 1/4 of the bag left and I think the fondant feels good... so I never use the rest but have never had any issues. Do most people use it all?

when i make mmf i use 4 cups of powdered sugar, i bag of marshmallows and 3 tablespoons of warm water.

I do not use all the powdered sugar that is posted on the recipe. It is more of a guideline. It all comes down to what type of weather/humidity you have where you live. Some have to use all of it, and some don't. It is recommended to add the powdered sugar until it feels right, then you are done=) So, long story short, you do not have to have all the powdered sugar added for it to be correct=) Jen

I agree, when it feels right, it's finished. I most always have powdered sugar left over.

i had the same situation the 2 times i made the MMF. mine seemed to tear easy though. im sure it was something that i did. icon_redface.gif

I usually reserve 1 C of powdered sugar and add some crisco during the kneading which keep it from cracking.

I HAVE ALWAYS USED THE WHOLE BAG AND IT CAME OUT PERFECT...MAYBE I WILL TRY TO USE LESS AND COMPARE THE TWO!!

i just made my first batch of mmf and it's a little bit ivory colored- not white- is that normal? do they make white food coloring paste?
i also used the whole 2 lbs of powdered sugar and it turned out great.....
