Saving A Cake

I was making a Train cake for this past weekend. On Friday my client called to pospone, until the 12th. I already have the cakes put together. I started carving and crump coating. Do you thing it would be ok to freeze until then? Or should I start fresh closer to the date?

And Do you guys think I should charge her more for posponing on such short notice?

Now it is Monday, so I hope you froze the cake on Friday. Well wrapped and crumb coated it should be fine for the 12th. If you have to re-bake it, the client should pay extra.

I agree with JoAnnB.

Definitely about the part about if you have to bake it again, you should charge the customer extra...but let her know that upfront before you go through with it.
