Royal Icing Consistency-Help

Sorry if this has been asked before. I'm taking Wilton Course III right after Course I, so I never got the full royal icing lesson in Course II. I'm supposed to bring stiff, medium, and thin consistency royal icing to class, but there aren't instructions in my course III book about how to change the consistency. There's just a recipe for stiff consistency icing. Is it the same as class buttercream? (i.e. add 1 tsp water per cup of stiff to get medium) Or is the adjustment different. Thanks so much for your help.

You are right: Make a batch of stiff, the add a tiny bit of water to thin it, and then thin some again. You can always add a bit more water, if it is too stiff, but it is hard in class to add more sugar.

I waited until I went to class to thin the icing. Then the instrucor could make sure I got the correct consistancy. Also, I got a syringe from the local pharmacy(they gave it to me). This is great for adding water. You can just put in drops at a time. Very easy to control the amount of water you add.

Thanks. I think I will just divide the stiff into the amounts I need and color them and then wait until class to add water to adjust the consistency. The syringe is a great idea. I'll have to see if I can get ahold of one.

Even though you skipped course two, i would reccomend it as it teaches you A LOT of flowers.....and also the basis for just about every other flower they dont teach you.

(that is of course if you dont know how to make them already)

but it is definately worth taking

There is no doubt that I will be taking course 2. It's just that the teacher in my area alternates teaching 2 and 3 each month, and the month after I took course 1 was a course 3 month...and I couldn't wait that long to take another decorating class icon_wink.gif . I'm sad because I may have to wait until January to take course 2 because of my crazy schedule, but I will definitely get it in. It does look really useful, and now that you've said so, I'm just that more convinced that I really need to take it. Thanks for weighing in on the subject.
