Creme Brulee Filling For Cake

I was watching a cake competition on the Food Network a while back and this one decorator had a Creme brulee filling with fresh raspberries. Has anyone made this filling before ? Is there a recipe that anyone has?
It sounds so yummy, especially if you love creme brulee. Thank you .

No, i have never had one...but i imagine it to be similar to our flans in PR.

Yes, Kat, it is similar in texture, though drier and I believe more sweet. I haven't had flan in ages and my mother-in-law who is also from Puerto Rico doesn't really care for it too much so she doesn't really make it.

find a pastry cream recipe that is based on cream rather than milk. When you are poaching your vanilla bean, put your sugar ( add twice as much as the recipe calls for, because burning reduces sugars sweetness) in a small sauce pan to caramelize. When it gets dark brown, remove it from the heat and pour it into the cream. It will foam wildly. Stir over low heat until all of the caramel has dissolved. Prepare the pastry cream per the recipe. Let cool before filling your cake.
