For those who work at bakerys or own their own bakery...what type of oven do you have?? I am working on my kitchen and could use some advise and some pictures of a good oven. I need one that can fit a 16in pan in. Could also use advise on refrigerators and freezers as well.

Thanks in advance for your help. I love this site...I have learned so much from everyone on here.

I have a Conventional gas commercial oven and an electric convection oven, both are vulcan. The ovens will fit full sheet pans which are 24 by 18 with no problem. I like cooking with gas on some things and the convection I use for mostly cookies. When looking for an oven , if you are going with commercial make sure it is for baking, some are designed more for roasting. You can sometimes find some good deals at restaurant auctions, but anything that is commercial is always more money.
