Leveling Cake?

Question...

when leveling the cake, must it be frozen right out of the freezer or does it have to be thawed out?

Most levelers will not cut through frozen cake very well.

I've never frozen one. I always level mine with my leveler while the cake is in the pan. That way I get the full height of the pan.

I would level prior to freezing it.

Don't level... SQUISH!!! While my cakes are still warm and in the pan, I use a damp dishtowel and press it down even. I have only leveled one cake and hated it....~Tonja

I wouldn't try to level while frozen. I always level my cakes when they are completly thawed.

ok thanks gals..

well it was frozen and I took it out to thaw a little.. then level with a knife since clearly the leveler didnt work while still semi frozen.

it looks OK..but now its full of crumbs!!!icon_sad.gif what do i doooo?

I'd hold it over the counter and blow the crumbs off... don't spit icon_confused.gif . If not that just lightly brush it off with a pastry brush.
