I have seen several cakes posted that use a satin or chiffon ribbon around the bottom of the cake, verus a piped border... can I do that if I am not covering the cake with fondant? I am worried if I put the ribbon around the bottom of my sheet cake, that given time, the butter/crisco from my buttercream will stain the ribbon. Will it? or am I ok?

Yes it will stain. There are a couple of options.

You can cover the back of the ribbon with tape
You can iron waxed paper to the back of the ribbon
You can attach it early and let it all discolor, so it looks the same all around

What type of tape would you use to line the ribbon with? That is a good idea. Just want to be sure if Scotch tape or other clear packing tape would be food safe enough to use. Masking tape might also work.
I had the same dilemma on a BC cake that the bride wanted a satin border for recently. The cake had to sit out in the heat of the day which didn't help but it still looked good.
