my local cake deco store told me that when duff refers to modeling choc, he's actually using choco pan dark choc fondant. i haven't tried it, but its easy to come by and i think would be worth a shot!

That is not true he actually uses Satin Ice fondant and white modeling chocolate made by Carma.
since we're on the s ubject....does anyone have a favorite? I have been wanting yo try choco pan.
