Has anyone ever heard of cream cheese ganache. I have an order for mini red velvet cakes and I want to cover them in cream cheese ganache. Do you think it's possible?

I doubt it. Cream cheese doesn't melt the same way as chocolate. The closest you could get is a cream cheese icing with ganache over that. but the ganache would have to be quite cool to prevent melting the cream cheese. it would also require refrigeration. It won't hurt the ganache, the it will not be shiny.

I have never heard of cream cheese ganache, but my cream cheese icing was so soft this past weekend that it probably could have poured like ganache!!! icon_lol.gif But seriously, that would be cool if there were such thing as cream cheese ganache! icon_smile.gif

i've made cream cheese ganache for truffles that i did for a wedding and also for a cake filling, not sure how it would work for covering a cake though. hmmm, pretty sure it would work, might have to try it on an upcoming cake order, they requested a rich chocolate cake.
