Are you referring to a specific brand? P&H carries Satin Ice, White Chocolat (don't know if that's the brand name or not), Cal-Java, Bakels, FondX and another one, I believe. Have you tried them all? Do you use them interchangably?

I buy SatinIce (white, red, black) and Pettinice Noire (chocolate) from a local cake decorating store but you can get them online from many sources.
