I have the same question!
I am making my first wedding cake in september. Covered with fondant and "fondant ribbon" all the way around the bottom. I am making all the decorations on friday and deliver it saturdayat noon. The filling need refrigeration (creamcheese).
Can I store it in the refrigerator?

Fondant is safe at room temp. for three days, BUT, that depends on what your cake filling is. As long as your filling don't require refirgeration, then it should fine by tomorrow. On the counter or pantry shelf..do you have cats ? or dogs ? make sure they do not get their paws on it.. icon_smile.gif

Yes as long as you did not use a perishable filling.

What about leftover MMF that is not on a cake yet? How long will that be good?

Girltrapped, fondant will last several weeks, well wrapped and in an airtight container. the 3-day mention above refers to fondant on the cake.

Fondant can be refrigerated, but there is a risk of condensation. If you take it from the fridge into a very cool room and gradually raise the temp, condensation will be less likely to form. But straight from the fridge in to a hot room-sweat big time. It will usually evaporate, but if you used bright colors they can bleed.

Also don't touch a fondant covered cake that you remove from the fridge until all the condensation is gone! I haven't had any problems with refriderating fondant.

Leave it on the counter overnight, no problem. You can store it in your cold oven (if it's not a gas oven with a pilot).

Leftover MMF can be stored wrapped in plastic or in a plastic bag and then in Tupperware in the cabinet, not the fridge. It should be good for at least a year.

Great tip Vienneaus! Never thought of that! I guess it would be important to remember it's in there though before you start your morning biscuits or whatver.... icon_lol.gificon_lol.gificon_lol.gificon_lol.gificon_lol.gif

Don't laugh, I've read sad stories about people forgetting and doing just that! My trick is that I put a post-it note that says "cake in oven" and I post it right over the "preheat" button so that it's impossible to miss the note!

MMF can be good for a very long time. It is only powdered sugar and marshmellows. You just need to make sure that it is in a sealed tight container. If some of the edges get real hard just pull off that part and you can warm it up for a few seconds in the microwave.
