I want to make a cake for my sis's b-day next week and have a pic of what I want to do. It's a tall white cake with red petunias sprinkled o top and around the base. It's iced with bc and the sides are then covered with what looks like shaved/flaked white chocolate and it's beautiful! I can't attach the pic because it was a book cover and it saved really small. What do you recomend for the shavings? This is a new one for me and I know my sis will love it. Thanks!

Personally, I like the look of nice size shavings of chocolate, I think it had a richer look to it.

Warm the chocolate slightly. You can use your hands, a warm light, whatever. Just soften-not melt- the outside of the chocolate. Using a vegetable peeler or a paring knife, shave the chocolate.

One of my cake decorating book had the following tips for shaving chocolate:

1) line several cups on your cup cake pans with plastic wrap.
2) melt your chocolate in the microwave very carefully (don't burn the chocolate or your hand) using 30 second increments.
3) pour the melted chocolate in the cup cake bases to mold into a block.
4) stick in the fridge to harden...
5) take out choc. blocks and shave them on the side of a cheese shaver/shreader. The small holes for small shavings...the large holes for large shavings.
6) use the plastic wrap to hold the block while shaving and can also be used to wrap up leftovers.

OR

1) melt chocolate and pour onto cookie sheet.
2) use spatula to push up chocolate curls. Do this only if you want long curls....
