Have my first order for a HS grad cake this Thurs for 40. How big is a typical sheet cake?
Do I need to buy a special pan? My largest is a 9x13
How thick is a sheet cake. The pics on here make the cakes seem quite thick .Any help and answers would be great. I am free to decorate it anyway.Just use school colors. Thanks. Oh what do you charge?
Hmmmmmmmmmmmmmmmmmmm typical sheet cake, I do believe a quarter sheet is a 9x13 a half sheet is two of those. I bought half sheet pans and like using two 9x13's it's easier when they want two flavors. They have a 3/4 sheet which is the 12x18 and I have put 2 1/2's together to make a whole or I've even put 4 9x13's together.
this is just me, who know's if I'm right, but it works.
I always add more batter to the pans than is called for to make a thicker cake, some use heating cores I haven't had a problem . I bake at 325 for a longer period, when the cake comes out it will be raised "some" not alot over the top of the pan, right when I take it out I take a towel and gently even out the top by pressing down.
I hope this makes sense to you, I also leave the pan on top of the cake when I flip it for about a 1/2 hour it keeps the moisture in the cake. Enjoy, and I hope this helps you some. I've found everything is trial and error at first. I can't get away from sheet cakes in my neck of the woods, wish I could.
Here's my two cents:
1/4 sheet = 9x13
1/2 sheet = 12x18
whoel = 2 - 12x18
If I'm wrong let me know.
Two 9x13s next to each other frosted as one large cake should be perfect to feed 40. Cut a thick piece of cardboard a little bigger than both pans for a base. Try to find a box that the cardboard fits in before you put the cake on it. You might need to trim the board a little. Cover the cardboard with freezer paper or heavy duty foil or shelf liner.
I'm also making a graduation cake. Will 3 11x15 be enough for a hundred people??
Lu
As per the Wilton book,
9x13 serves approximately 45 people
11x15 serves approximately 60 people
12x18 serves approximately 72 people
thats alot of cake fro a graduation (100) good luck to you

You must mean:
THREE 9x13 serves approximately 45 people
TWO 11x15 serves approximately 60 people
TWO 12x18 serves approximately 72 people
I always say: a 9x13 feeds 12+
an 11x15 feeds 28+
a 12x18 feeds 36+
Here's the Wilton chart which shows the number of servings for a 2 layer cake: http://www.wilton.com/cake/cakeprep/baking/times/party_2inch.cfm
This is where Twooten173 got her figures I believe. It is based on 2 layers of cake.
Here's a picture I took that shows an 11x15, a 12x18, and two 12x18s frosted as one cake:
On the biggest cake, I ask for my board back. Once they didn't take off the freezer paper which covered my board; they just wiped it down and returned it. I saw knife scratches in the paper and counted that the people got about 90 slices out of it. If there are other desserts at the event for which you are making the cake; I think two 12x18s frosted as one large 18x24 cake will be enough.

Cardboard isn't strong enough - you likely will get some flex resulting in cracks.
Use a foam cord board. you need some strength.
it says that a 9x13 feeds up to 40, but i make those sizes every week and my customers complain about it not being enough. i would go with a 12x18. remember, those figures are based on 1"x2" servings...some people think that's just to small a serving.

Little Linda, just FYI, your post is correct that 2 12x18s together will make an 18x24 but just wanted to point out that the header of your photo mentions a cake that is 24x36. Just didn't want anyone to get confused (or more confused, as in my case, lol
)
When you guys make 2 11x15s together, what size box do you put it in? I have trouble fitting the full sheet box in my refrigerator, but I don't know if the smaller box would hold 2 cakes that size. Just wondering...
Ok, just did two 2-layer 9"x13" sheet cakes for a graduation. There were 100 + people there. The lady told me that there were only 10 pieces of cake left at the end of the day.

Thanks for pointing that out! I'll have to fix it!
PS: Those were made before I started using Melvira's method of smoothing! What a difference now!
