Cookie On A Stick Validation!

I just need a little validation. I know what I have to do and just thought a few reassuring suggestions would help me sleep. I own a small cake shop. I also sell cookies, brownies etc. My local casino has commissioned me to do their baked goods, cakes and cookies mostly. First week in July, I have to make 500 sugar cookies on a stick. The cookies I am using is a premade drop cookie. bakes well on a stick. They have to be on 11" stick. I am going to use a poured cookie icing the crust without getting hard like RI. Going to print out their logo on edible circles and decorate with RI. I have done this before just not on a stick. Any suggestions or thoughts would be helpful. Thanks

Hi, Can I suggest to use the wilton sugar cookie recipe, is ok to bake and use the sticks to make shish ka bas ( I don't know how to write it down) and will not be easier for you to use fondant to cover your cookes,you can paint on the logo and and glued with Karo honey. remember the cookie with be wider in order to get the stick in. Congrats on such a huge deal! Decorating them on a stick is really simple...it isn't much harder than without it...sometimes the cookies start to spin on you, but add a little royal icing to the stick and pop it back in...you will do great!
