Customer Wants Cake 3 Days Before Party.. ? Freshness

I have to do a CCC for a customer.. The party is on Saturday afternoon and she wants to pick the cake up Thursday evening... She lives an 45 min. away from me but works close by.. The party is Saturday and she has to transport the cake 1 hr. to the party destination... I'm using buttercream and she is going to keep in chilled... I'm just worried about the freshness... Should I do anything on my end to ensure it will still be fresh.. I would have to make it on Wed in order to have it ready for pickup...Any advice is appreciated! icon_smile.gif

It might not be as fresh as a cake made the day before, but it shouldn't be bad. Put on a crumb coat/layer of frosting as soon as it cools to "lock in" the moisture.

The cupcakes should be fine as long as they are sealed with a good BC icing.I have made cakes before 2-3 days and they are still very good.

If you are using a mix as a base you will be fine, but if you are going to make a scratch cake, that time line would be pushing it. The scratch cakes do not "hold" like one from a mix will.

Cupcakes will get stale faster than a big cake. I wouldn't do it.

To me if that's what she wants, that's what she'll get.. She is the customer. To me, once the cake is in her hands, then she is responsible for what happens to it, AS LONG as she was told by you of the consequences. That there is a possibility of it going bad on the third day.
Customer is always right.. (although I really don't think so) ! icon_smile.gif

I certainly wouldn't want my name on it.

Cupcakes don't hold up that well. If you can box the cake, and wrap the box it will help, some.

I just realized that it is a CUPCAKE cake. DUH! Nope, I would not do that one either. Cupcakes do not stay fresh that long. They either dry out or they get really soggy. (depending on how they are kept) If it was a regular cake you would be ok - can you talk her into that instead?

Thanks for the replies !!! For some reason I'm not getting a message showing that I've received replies.... I actually spoke with her this morning and expressed my concerns with her regarding the freshness. She has decided to pick it up Friday evening... I feel so much better icon_smile.gif

hi... you could also brush them with simple syrup before you decorate them. That will help them stay moist longer.

Twins, I'm glad you asked this question b/c a client of mine wants a two tiered cake for her father's birthday next week. Well she wants the cake next Wednesday but the party isn't until Saturday. That means I would have to bake Tuesday.

Do any of you think the cake will taste good by Saturday? I'm thinking it would since I'm doctoring up a cake mix. I made a doctored mix Sunday and I tasted the cake today and it is still very moist.

Just want to make sure I won't run into any problems.
