... now what do I do with it?

I want to cover it with BC and practice stringwork, borders, etc. Do you cover it with plastic wrap first or just cover the styrafoam with the BC? What do you do with the dummy when you are finished with it? wash it with hotwater and soap and let it dry?

It increases the washability, if you cover the dummy with plastic. And if you are just doing practice work, scrape off the icing and wipe it with a damp towel. It may still be a bit sticky, but it won't effect your practice work.

Iknow this is going to sound strange. But what I do is I roll out either fondant or gumpaste and cover the cake with that. I let it harden then I have a smooth worksurface to use. I can decorate with buttercream, practice borders, use string work, use molds and all the other stuff you regularly do. Then when im finished I take a rubber spatula and scrape off all the icing. Wipe off excess with paper towel and there you go. A completely "brand new" ready to go work surface.
