I made an amaretto cake and it's not freezing. I am assuming because it has alcohol in it. If I want to make this cake 3 weeks ahead of the time that I need it and I put it in the freezer, will it keep? Thanks.

the alcohol evaporates when the cake bakes. The sugar can impair the ability to freeze. It needs to be very carefully wrapped, to survive the freezer.

I personally prefer to freeze my cakes because I believe this helps "lock" in the moisture of the cake. However, I prefer not to freeze longer than 2 weeks.
