Hello all. I am a newbie. As a teen I helped my neighbor, who decorated cakes, and have always loved it. Now I am taking the plunge. I am very serious about this and want to give it my best effort. That being said, I was curious if anyone here could advise on whether making practice cakes up in advance and freezing them is wise or a disaster in the making. I work full time and would like to bake all of my cakes, 3-5 of them, on the weekend.

Any guidence is greatly appreciated.

If the cake is well wrapped, it will be fine in the freezer for a few weeks. However, if you put it in a 'frost free' freezer, it won't last that long. After a couple of weeks, the taste and texture will suffer.

If you want to just practice decorating, consider using a styrofoam dummy, or even an inverted cake pan. If you practice in all white, you can scrape it off and start over using the same icing. This is particularly helpful if you are practicing stringwork and borders.
