Help!!!!! Please Icing Problem, And A Road Trip

icon_surprised.gif I have a rush carrot cake order that is going with some friends in the morning on a 7-8 road trip to Maryland.

I plan to use a BC Cream Icing, is there anyway to stablize it to keep it from melting by the time they get to MD?


My first thought was to also add Meringue Powder.

HELP PLEASE!!!

I would recommend adding crisco - doing the half butter / half crisco recipe - and using meringue. And can you buy one of those styrofoam coolers & put it in there??

If you are using butter in your buttercream I'm afraid I have not heard of a way to keep it from melting. The only things I've heard is freeze or refrigerate cake and turn AC on full blast and hope for the best. Mine didn't make it for an hour in a hundred degree heat. I even tried placing dry ice in the trunk with it. Maybe next time I'll try more than 5 lbs of it. I also didn't have cake cold at all. Room temp.

Meringue powder won't help much. It really needs to be cool. Will the cake fit in a cooler? If not, can you line the box with Blue Ice? A heavy cardboard box with Blue Ice will help prevent meltdown.

I'm sorry I have no suggestions as I'm still trying to figure that kind of stuff out myself- I only make cakes for family friends- but often times they travel half or full day without refrigeration- but I either BC them when I get to the other end or I've travelled with MMF covered cake before.

I always use alpine in my icing so it may be okay in that regard. Maybe a little extra powdered sugar as well.

I posted this same question earlier in the week after I found out a co-worker plans on taking one of my cakes on a 2 1/2 hour road trip.

I was told to try to use either sweetex or alpine shortening. If you don't have either, then use all crisco recipe for bc icing. Add your meringue powder and maybe a little more powdered sugar than usual.

Tell them to keep it in a A/C 'd car all the way there.

And as everyone keeps telling me....it is out of my control once I give it to them. They can do whatever they want to with it, but I have no control over it at that point.

Make sure they keep it in the passenger part of the car, as the trunk gets pretty hot

Tell them drive-thru meals only, and potty breaks one at a time with the engine running and air on COLD

Bit too late to offer this advice (to them lol) but a travesty to have to travel in the heat of summer during day- oh well advice for next time there's a road trip and cake in tow during the summer: travel at night icon_biggrin.gif just an idea LOL

Thanks guys, I may be safe they can not leave until tonight after 7.

The cake are in the frig and I will ice the cold cake when I get home and put it back in the frig until they show up to get it.

I told them to put it in a cooler with some ice. I made them understand that they will be eating a cake with NO icing if they don't. Or they wil be scraping it off the side and bottom of the box.

It should be interesting to hear what happened after they get back. It is for one of the cousin's, wife's birthday.

And as you said fourangelsmommie, it is out of my control once I give it to them.

Exactly icon_biggrin.gif and as soon as they drive off, you can relax and not stress about it anymore because you did your part! YAY!

Darn ya just reminded me I have to bake a carrot cake in 3 weeks LOL going to experiment with filling this time. Or maybe not, I don't know, she likes the carrot cake I make every year and specifically requests it, why ruin a good thing with an experiment thumbs_up.gif

Thought I would post a pic (in my photos) of the finished cake. They came to get it and hit the road.

It is in a cooler with some ice and has been shrink wrapped.

Breathing a little easier now, but still can't wait to hear if it made it there in one piece.

Thanks to you all for your help. We are getting some relief from the heat so hopefully that will help.
