How Do You "doctor" Your Cake Mixes

I have read a few threads that say they "doctored" their cake mixes. I found of few recipes on the site... just twondering what other clever ideas you have for adding flavors to cake mixes.

Can't wait to read what you creative people are doing!

Coffee creamers. Substitue the milk (all of some of it depending on your taste) with liquid coffee creamer. I also substitue some of the milk with cremer in my icing and in instant pudding if I use if for filling. You can also add few Tbls. of the powdered creamer to the cake mix instead of using the liquid.

Here's the WASC cake recipe, but with expanded flavor variations:
(White chocolate, using liquor and liqueurs, berry and lemon juices, cocoa, different extract, adding raspberries or strawberries to batter, also use any flavor cake mix.)

From reading the posts about creamers, it would appear that 2 Tbsp. dry creamer, or 1/3 cup liquid per mix works well.

Also...there are a couple cookbooks available called "Cake Mix Doctor" by Anne Byrne...the original book, a Chocolate Cake Mix Doctor and A Cupcake Cake Mix Doctor one...the recipes in all 3 are really good.

I always substitute applesauce in equal parts or a little more for the fat in any cake mix. It makes the cake moist (and stays that way for days).

The coffee creamer thing is great in icing.

I just tried the peppermint choc. doctored recipe from the Cake Doctor book this weekend and it was wonderful. The cake was soooo moist.

The icing on this recipe was really yummy to!

I would suggest this book to anyone, it has great ideas and the book is not overly priced either.

I also have the cake mix doctor book and I was amazed at all the different varities it contains. I haven't mae on yet but I problay have read it front to back like 5 times!

Check it out at the library to try before you buy. Or photocopy the pages at the library that interest you.

I found Cake Mix Dr. recipe books at my local library...always a great resource for cake decorating!

my aunt (who was a professional wedding cake decorator) sent me the cake doctor book before she passed on. It is a lifesaver! try the "darn good chocolate cake" page 34?????

all of mine I add sugar, flour, sour cream. I get all kinds of compliments. Plus I use the cake doctor book

I also add the extra egg, sugar, and flour. Then depending on what kind of cake im making depends on that I use. Like...If I make a strawberry cake...I use white cake mix then use Strawberry soda instead of water, and strawberry yogurt. Soooo good! In chocolate cake, I use mayo and use coffee in place of some of the water, in vanilla cakes I use the sour cream and 1/3-2/3 cup french vanilla coffee creamer in place of some of the water.

Yes - get the Cake Mix Doctor book! I just got it and have made the chocolate kahlua cake and the hummingbird cake. They were both AMAZING! I actually just did the hummingbird cake for Father's Day and I had 3 people tell me it was the best cake I'd ever made. Can't go wrong trying some of these recipes out.
