What is the Molding Chocolate that they use on Ace of Cakes all of the time? I hear about it on nearly every episode and wonder what it is? Anyone? And where can we purchase it?

They have never said the name, but I have heard it is Albert Uster's brand.

I wonder, because the one they show came in a round tub???? It looks so easy to work with and I bet it taste yummy, better than fondant probably, but expensive! Thanks!

I often wondered the same thing, and they really seem to enjoy using it. I have also wondered if they are making their own fondant or do they order that all the time too.

you can make your own VERY easily.

1/3 c light corn syrup and 1 lb chocolate or candy melts.

melt chocolate, add syrup, stir. cover with plastic until cool. it will look oily, but you'll need to leave it so that you can kneed it back in so it isnt too dry afterwards. it models great. tastes just like chocolate, just a softer texture.

p.s. for the person who mentioned that it tastes better than fondant, you need to try satin ice! it is very good!!! i like satin ice and the mod. choc, but they textures are different when you "chew" on them.

Try Beryls ... I have always made mine, never purchased - and at these prices I will probably continue to make it unfortunately.

Wow! Thanks for posting this. I've always wondered about the modeling chocolate on Ace of Cakes, too. I can't wait to try now!

youre welcome.

brwntab, they also order their fondant. one episode, he was on the phone (pretty perterbed) for a long time trying to get his order delivered cause they ran out and the supplier was being slow...

i dont know the brand. they usually blur it out or dont show the label.

The recipe I use is 14 oz of semisweet or bittersweet chocolate finely chopped and 7 oz of Golden Syrup. You melt the chocolate in the microwave and then stir in the golden syrup. Transfer it to a plastic bag and refrigerate it until it is firm enough to work with. I even use it to cover cakes with. To roll it out I dust my surface with cocoa powder and it works like fondant.

There is a pic in my gallery of the chocolate used like fondant. It's the one with the truffles around the base.

We have an Uster outlet in San Leandro, Ca. Just 30 minutes away. The problem is they have a $100.00 minimum order, so I only buy once a year if that. They are the company that makes the best gold luster dust I've ever used, now we can't buy it in California, same as with the silver or gold dragees. I am going to have to find someone back East who orders from them send me a bottle of the gold dust, because after 7 years mine is finally getting to the bottom of the bottle. They also carry the chocolate rounds for the La Girolle chocolate ruffler.
