I'm making a Father's Day cake for my dad this weekend. Upon his request, he's getting a 2-layer chocolate cake. He wants the filling to be chocolate pudding with cherries, and the frosting will be either poured or whipped chocolate ganache.

My question - can whipped ganache stand up enough to make a decent dam to hold in the filling without a blowout? If not, any advice?

Whipped ganache can be used as a dam. be generous with the width to avoid leaking. and keeping it chilled will help it hold. The warmer it gets, it can soften.

Thanks, JoAnnB. I think I'll take a small amount of the ganache, then, and chill it and use that for the dam.
