Hello everyone!
Quick question...when making a wedding cake, how do you usually explain the cake servings to people? Do you give them a copy of Wilton's cake slicing guide to ensure that they cut the right size of cake to serve the number that they need?
My concern is that if I leave the cake serving up to someone in the wedding, they might cut big birthday-size pieces. I usually offer to cut the cake, so that I won't get blamed later for not having enough cake.

PS....What is an appropriate cake slicing fee?
I give the client a cutting guide- a picture of how to make the cuts, and where the dowels and boards are.
I charge $25/hour to cut the cake, and they pay me for waiting time. Most of the time, there is someone the bride has chosen to cut the cake. I just make sure I talk to that person, in case they have questions.
Hi, do you know where I can get the Wilton serving guide online? Instead of the book? I need to e-mail it and I don't have a scanner. Thanks
Here you go. This is from Wilton.com. Wedding cutting guide.

I always explain the portion here in the south people like to eat , at least the weddings I go to. Most of my brides choose to go up few servings and find someone to cut the cake. I always include a little extra. My first few jobs I cut the cake to get my name out a little and then I stopped to much pressure !!
