Help! I Made A Booboo...

I made a graduation cake Wednesday night. Well, the customer never came to pick it up. Phone # was busy, etc. As I laid down to go to sleep I remembered that I think she didn't want it until next Thurs...Oh well, good practice for first ever FBCT (that, by the way, was very easy). Anyway, how long will this cake stay good? I want to take it to a family lunch on Sunday or should I just take it to work and let them have it??? If it didn't have any color on it I would say throw it in the freezer! But color sometimes runs when it thaws.....sometimes it doesn't.........

Of course it has royal blue writing and bottom border that had bled out a tiny bit. icon_cry.gif Which I will adjust for the real cake! It doesn't matter about the bleeding for the family lunch, we'll eat anything. I don't think it will fit in my freezer or fridge. It is on a piece of board. It is all Crisco icing so, if uncut, will it keep 2 1/2 more days in the A/C??

I think it will be fine as long as the cake is sealed good with the icing.

It will be ok to eat on Sunday at your family lunch. You are not selling it to anybody. You should be able to leave it out as long as you can cover it somehow. (I know I'd never have room in my fridge.) Naturally you are making a new fresh one for your customer next week.

You also might either add some cornstarch to your royal blue icing on the new cake or, after you pipe it onto your cake, powder some cornstarch onto it with a sponge. It will keep the color from running.

I agree with what others have said ... BC really seals in the moisture of the cake, so it should taste just fine at your family gathering on Sunday.

P.S. - Don't feel bad ... I've mixed up order dates before, too. icon_redface.gif Be glad that you made it a week early instead of a week late!! icon_lol.gificon_lol.gificon_lol.gif

edited to fix spelling....and to say ....maybe it was frozen, but no ton the counter....and I would think the fridge would dry it out. JMO!

I know you said you don't have room in your fridge or freezer, but I have made that same booboo, too! I froze the cake, then, most importantly I think, thaw it in the fridge. It minimizes the condensation and bleeding. The clients in my case just raved about the cake and never knew what had happened!

Twinlines7 you are gasping from the thought of 4 day old cake? I am gasping at the thought of anyone that would make a booboo like this and then try to cut corners by freezing the cake and then giving it to the client later. At least our OP is feeding her booboo to her family and not poor, unsuspecting clients who thought they were receiving a freshly baked cake.

Seems to me that a 4 day old cake is not so bad, as long as it is kept covered and in a relatively cool area. I don't know about you guys, but when I make a cake for my family there is no way we can eat it in a day or two (my husband and I are diabetic and we don't eat a lot of cake and my kids are young enough where I can still watch their sugar intake)...... we have had a cake for 5 or six days before it was finishes.

I don't think that was what she wanted to do. I think she wanted to serve it to her family on Sunday and wanted to know if she should freeze it until Sunday.

Actually, I'm eating some NOW! icon_biggrin.gif I took some to work today and the rest now will fit in fridge until Sunday. Everyone can rest easy! thumbs_up.gif

BTW I never thought about saving it for the client besides, she is a friend and thought my booboo was funny. I will have pics to show old and new cake and my first FBCT.
