Help! Whipped Cream Frosting Question

Hi CC,

I have a customer asking for four dozen cupcakes to be delivered next Friday for a family reunion she's hosting that Sunday. So, the cupcakes will be sitting in their boxes in her fridge for about two days. With bc, I wouldn't be concerned, but she's asking for whipped cream frosting, instead.

I don't use whipped cream that often, and when I do, I generally use it as a filling, not a frosting. So, my question is, if I frost her cupcakes with whipped cream, how will they hold up after two days in the fridge? Will the whipped cream start to break down?

Yes the whipped cream will break down after two days in the fridge. Does it have to be actual whipped cream, or just a fluffy icing? I have gotten good 'whipped cream' results by mixing Pastry Pride with a whipped buttercream.

Thanks, JoAnn. That's what I figured. The customer said she really likes the taste of whipped cream. I suggested my whipped bc as an alternative -- it's light, but holds up well in the fridge. Fingers crossed that she'll go for that.

What about using Wilton's stablized whipped cream icing? It seemed to hold up well for me when I used it. Even after being stored a few days in the fridge I noticed it was still a bit firm. You can always try a practice run and see how long it stays in your fridge before breaking down.

If you stabilize the whipped cream, using either melted geletin or piping gel (see Wilton site for that recipe), it will last for days - I had some in my fridge for a good 3-4 days (it was extra from a cake) and it never separated.
