Fondant Flowers And The Wire

I am gathering all my materials together to start teaching myself how to do fondant flowers. I am using the Wilton gumpate book and kit to start out with.

My question is, these flowers that use a floral wire, when I see them on cakes in photos, is the wire actually sticking into the cake? Is that considered safe?

Maybe this sounds like a stupid question, but I am really curious about this. All the flowers in the book use floral wire.

Also - I purchased green and also white wire. Any preferences?

Green or white wire depends on the type of flower and how it fits in a spray or on its own. The wires should not be directly into the cake. A spray can lay on top of a layer, or even better, the base of the flower or arrangement can go into a flower pick.

The wires can be wrapped in plastic, if necessary, and then insert into the cake. however, if the flower is heavy a thin wire can tear the cake so placement is important.

Be sure to allow plenty of time to dry any centers for flowers. Your results will be better.
