I've made a few cakes-only a few and I had no idea how to store the cake before use. I'm wondering when I make a fondant coverd cake can I refridgerate the cake after the fondant is on the cake or do you have to do the fondant the day of?

Some fondant can be refrigerated, but there is some risk of the cake having condensation. the moisture on the outside can cause colors to run, and the fondant can be sticky.

You will need to experiment in your location for humidity and the brand of fondant you use.

If the filling needs refrigeration, the whole cake must be refrigerated.

Does covering the cake (after the fondant is on) with plastic wrap help for less condinsation when put in the frig or sould it be put in the freezer? I want to cover the cake friday night with the fondant that way I can put everything else together on Saturday (the day of the event).

Covering the cake in plastic would make it sweat more. Best to leave it in a cool dark place or under a strong light or in an oven with it not turned on and the light on. If you use Satin Ice you can freeze it.

Have you already frozen Satin Ice? How did you cover it and how did it do when defrosted?
