I have tried making this before. And got a recipe to use Baker's Sweet Chocolate. Can i use Ghirardelli's semi-sweet chocolate chips or Nestle's toll house Morsels or wilton's chocolate melts? I'm looking for something that's not too strong. (no dark chocolate, rather have milk chocolate taste)

You can use most any chocolate you like. If you use all Milk chocolate the ganache needs a little less cream, and white chocolate needs even less cream. The recipes are very forgiving. If you end up with something too thin, you can just add a bit more melted chocolate.
